Mango + caramel muffin

Ingredients ( 10-11 )

  • 120g unsalted butter
  • 150g brown sugar
  • 20g sugar
  • 2 eggs (L size)
  • 300g flour
  • 1 tablespoon baking powder
  • salt
  • 120ml fresh milk
  • 100g caramel cream
  • 2 mango

Directions

  1. Peel the mango and cut into small dice (size = 1.5cm) then keep aside
  2. In a bowl, beat the butter until creamy
  3. Add in the sugar and beat again until it becomes white
  4. In another bowl, beat the eggs for a while
  5. Add 1/3 of the eggs(from the step 4) into the butter (from the step 3) and beat. Continue for the other 2/3 of the combined eggs
  6. Add in 1/3 of the sifted flour and baking powder and immediately stir it, then add in 1/2 of the fresh milk. Continue this step for each 1/3 of the sifted flour and baking powder. (after add in the flour, stir immediately and add in 1/2 of the fresh milk)
  7. Add in caramel cream and mix for a while (no need to mix until blended)
  8. Add in the mango and stir the mixture
  9. Finally, place the mixture into the muffin cup and bake at 180 degree for about 15-20 minutes
