A creamy and full-flavoured Chicken Curry with just a little bite!

Ingredients ( 4 )

  • 1/4 Cup Thai Green Curry paste
  • 2 chicken thigh fillets (around 500g)
  • 400ml Coconut Cream
  • Around 500g vegetables (beans, baby corn, bamboo shoots, broccoli, carrot, just use your imagination!)

Directions

  1. Cut the chicken into strips
  2. Heat the curry paste in a wok or frypan for around 5 minutes, until it becomes fragrant
  3. Add the chicken and cook for around 10 minutes, until lightly browned
  4. Add coconut cream and simmer for 30 minutes, stirring occasionally
  5. Add vegetables and simmer for a further 10 minutes, stirring occasionally
  6. Serve on a bed of rice - delicious!
