Add a flavour of sweet apples in this delightful seafood dish.

Ingredients ( 2 )

  • 2 Washington Red Delicious apple
  • 2 fresh scallop, approx 300g
  • 2 pc cod fish, approx 200g
  • 2 baby squids
  • 2 large prawns
  • Seasoning: Fish Stock, enough to cover the entire ingredients
  • Seasoning: Sweetened water or diluted honey
  • Seasoning: Light soy sauce
  • Seasoning: Apple juice

Directions

  1. Cut scallops in half. Slice sideways but do not cut through. Cut cods into square. Stuff apples in baby squids. Cut head off prawns but keep shell.
  2. Blanch scallops, cods and prawns.
  3. Mash apple. Add fish stock, sweetened water and light soy sauce. Add salt to apple juice, heat and add in seafood, with squid last of all. Cook till squid becomes white.
  4. Add a small amount of apple juice. Add starch solution to thicken.
