Coconut Chocolate Pecan Pie

Rich - flavorful deep dish pie

Ingredients ( 8 )
- 1 (15 oz.) refrigerated pie crusts
- 1/3 C. Butter - melted
- 1 C. sugar
- 1 C. light corn syrup
- 4 Lg. eggs - slightly beaten
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1 1/2 C. pecan halves
- 1 C. sweetened coconut - toasted
- 3/4 C. semi-sweet chocolate chunks or morsels
Directions

Unroll 1 piecrust and place on a lightly flours surface. Lightly brush top of crust with water. Unroll remaining curst and place over bottom crust, gently roll into a 10" circle. Fit into 9" deep dish pie pan. Crimp edges.

Stir together butter and next 5 ingredients in a large bowl, stir well. Stir in pecans and remaining ingredients. Pour filling into piecrust.

Bake at 325 degrees for 1 hour and 15 minutes with aluminum foil if necessary to slow browning. Cool completely on wire rack.
