Ingredients ( 4 )
- Chick peas (two 13-oz. cans, drained and washed)
- Chopped tomatoes (one 23-oz. can)
- Two medium-to-large onions
- Olive oil
- Spinach or greens (optional)
- Grated hard cheese
- Pasta or rice (about one pound)
Directions
-
Finely chop the onion and fry it over medium heat in the oil.
-
When the onions are translucent (not browned), add the chick peas. Stir frequently to keep the beans from sticking or burning.
-
After about seven to ten minutes, add the tomatoes.
-
Add the greens, if you have them.
-
Allow the mixture to simmer on medium-low heat for as long as possible.
-
Serve over pasta or rice, and add grated hard cheese to taste.
