Place prepared dough onto a floured work surface.
Knead with your both hands as in the picture
With your hands, form the dough into a ball, then press down and away from you with the heels of your hands. Knead for about 10-15 minutes. It is ready when you can see your finger through the dough as in the picture
Place the dough into a bowl and cover it with the plastic or wet cloth. Let it rise double (around 20 minutes)
Do "finger test" on your dough as in the picture. Well-kneaded dough should feel smooth and elastic. Press your fingertip into the dough; it should spring back.
Press down your dough to remove the air inside
Divide the dough into 8 portions. For each portion form into a ball
Close the bottom of each ball as in the picture. Bench time for about 10 minutes
