Raisin muffin with chocolate

Ingredients ( 10 - 11 pcs )

  • 120g butter (at room temperature)
  • 150g brown sugar
  • 20g sugar
  • 2 eggs (large size)
  • 300g flour
  • 1 tablespoon baking powder
  • 120ml fresh milk
  • 200g raisin or dried fruit
  • 90g chocolate (cut into small size)
  • For crumble :-
  • - 14g almond powder
  • - 25g flour
  • - 25g cold butter
  • - 25g sugar

Directions

  1. Raisinmuffin Beat butter until creamy
  2. Raisinmuffin2 While beaten gradually add in brown sugar and sugar. Beat until fluffy
  3. Raisinmuffin3 Add 1/3 of the egg and beat then repeat the same process for another 2/3.
  4. Sift baking powder and flour
  5. Raisinmuffin4 Add 1/3 of the sift baking powder and flour into the mixture of step 3 and mix.
  6. Raisinmuffin5 Add 1/2 of the fresh milk into the mixture of step 5 and mix (make sure the air flow through the mixture)
  7. Repeat step 5 and 6 until finish the fresh milk and flour + baking powder.
  8. Raisinmuffin6 Add raisin and chocolate and mix well until blended. Pour the mixture into muffin cup (full the cup)
  9. Raisinmuffin7 Prepare the crumble : Add all ingredients for crumble into a bowl. Mix with your hand until it become like breadcrumb.
  10. Raisinmuffin8 Spread crumble on the top of the muffin. Bake at 180 celcius for about 20 minutes. Reduce the temperature to 170 celcius and bake again for about 5-10 minutes or until cooked.
