My family loves this recipe. To tell you the truth it's my favorite too!! My Husband, however, loves ham but does not like chunks of it in hs mac n cheese... So I mince it... This way you get the flavor. Very Yummy!!

Ingredients ( 4 - 6 )

  • 8 oz. Elbow or mini shell macaroni
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. flour
  • 1 tsp. salt (I use sea salt)
  • 1/4 tsp. black pepper
  • 2 1/2 Cups milk
  • 4 oz. cream cheese
  • 1 cup finely chopped ham
  • 1/2 Tbsp. minced onion (optional)
  • 1 Cup bread crumbs
  • 1/4 Cup parmesan cheese
  • 2 Tbsp. butter or margarine
  • dried or fresh finely chopped parsley (optional)

Directions

  1. Preheat oven to 350. Fill a large pot 1/2 full of water and boil. Once fully boiled add about a 1/2tbsp. of salt and the pasta. Boil 8 minutes:drain. In a medium saucepan melt butter then add flour,salt and pepper. Stir with a spatula until smooth. Slowly add in a little milk and continue to stir until it thickens. Add the cream cheese and a little more milk. Keep stirring until cream cheese is a little lumpy and sauce begins to re-thicken. Add the rest of the milk, minced onion and ham. Once sauce has fully thickened and is boiling add shredded cheese. Stir until smooth and remove from heat. Mix the pasta with the sauce in a glass dish. In a small bowl mix the bread crumbs, parmesan cheese and parsley. Cut butter in with fork to make a slight crumble. Spread over pasta and sauce. Bake for 25 - 30 minutes. Enjoy!!
