Ingredients ( 4 servings )

  • Small onion finely chopped
  • 4 cloves of garlic finely chopped
  • 2 tablespoons of cilantro chopped
  • 1 small red bell pepper chopped into small pieces
  • 1 can chopped mexican flavour tomatoes
  • 1 can black beans
  • 1/4 teaspoon of ground cumin
  • About 1/2 cup chicken, beef, or vegetable stock
  • 1/4 cup chuncky tomato sauce or spaghetti sauce
  • 1/2 cup or more of low fat cheddar cheese
  • 1/4 cup of chopped black olives
  • Whole wheat pasta or brown rice cooked

Directions

  1. Heat wok or skillet over medium heat and add 1/4 cup of stock.
  2. When stock is starting to boil, add onion and garlic and simmer until onions are soft. Add a little bit more stock if the pan gets dry.
  3. Add cilantro and cook for a few minutes. Add a little bit more stock if the pan is getting dry.
  4. Add canned tomatoes and cumin. Turn down heat to a low setting. Simmer tomato mixture for a few minutes.
  5. Add red bell pepper and continue to simmer.
  6. Add the black beans and continue to simmer.
  7. Pour in some spaghetti sauce or tomato sauce to thicken and flavour the dish.
  8. Let simmer for about 5 minutes or more.
  9. Add the olives and grated cheese. Cover the pan and let simmer until the cheese has melted.
  10. Serve over whole wheat pasta or brown rice.
