A flexible recipe for healthy, tasty muffins. My mom passed it on to me, and I like to add all kinds of extras. As long as I keep the ratios consistent, the muffins turn out well.

Ingredients ( 14 )

  • 2.5 cups oatbran
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 1.5 cups applesauce
  • 1 cup or less of sweetener (honey, maple syrup, sugar, whatever)
  • 1/2 cup oil
  • 2 eggs
  • 2 teaspoons vanilla extract

Directions

  1. Mix dry ingredients.
  2. Mix wet ingredients. If you are using butter, melt and cool before adding.
  3. Blend the dry and wet. If you are adding nuts or something large like that, add it at the very end. Don't overmix the batter or the muffins will be tough.
  4. Fill the muffin holes about two-thirds full with batter (don't let that word trick you, it should be more like dough).
  5. Bake at 350 degrees, F. for about 20 minutes, or until you can put a toothpick in and pull it out clean.
  6. Some things I have added: chopped figs, teff flour, ground flax seeds, carob chips, chocolate chips, walnuts, sesame seeds, raisins, berries, coconut, other kinds of flour.
