Moist Chocolate Birthday Cake
This is a chocolate cake with a rich moist centre that is unique in flavour thanks to the combination of creamy greek yoghurt, coffee and dark chocolate. This cake has become a tradition among my family and friends on many special occassions such as birthdays. It's also very popular with children and of course with all chocaholics.

Ingredients ( 12- 16 )
- 280 gr. of unsalted butter
- 4 tsp. of vanilla essence
- 3 cups of castor sugar
- 6 eggs
- 1 ½ cups of self raising flour
- 2/3 cup cocoa
- 1 ½ cups of Greek yoghurt
- 4 ½ tsp of instant coffee
- 2 tbsp of boiling water
- For the mocha glaze:
- 90 gr. of dark chocolate
- 60 gr. unsalted butter
- 1 ½ tsp of instant coffee
- 2 tbsp of water
- 1 ½ cups of icing sugar
Directions

Grease a 25cm round tin.

Cream butter, essence and sugar till light and fluffy.

Beat in egg yolks, one at a time.

Stir in sifted flour, cocoa and yoghurt. Then combined coffee and water.

Beat egg whites till soft peaks are formed and fold into mixture in two lots.

Pour the mixture in the prepared tin.

Bake in a moderate oven (350F/ 190C) for 1hr- 1hr and 10mins.

After 45 mins of baking you may need to cover it with aluminium foil.

Leave on a wire rack to cool. Then cover it in glaze. Decorate with smarties for a children's birthday cake (see picture) or walnuts or white chocolate shavings for a more sophisticated appearance.

Mocha glaze:

Combine chocolate, butter and combined coffee and water over a low heat stiring constantly, till smooth.

Remove from heat and gradually sift in icing sugar. Spread over cake with a warm spatula or large knife.
