Quick creamy carrot soup

This takes less than 15 minutes to prepare. It's not exactly low fat (small servings are probably best) but it's delicious.

Ingredients ( 2 - 3 )
- 1 10.75 can of cream of celery soup
- 8 oz. cut and peeled baby carrots
- 2 tbsp. cinnamon flavored apple sauce
- 1 tbsp. dark brown sugar
- 1 tbsp. butter
- salt
- fresh ground black pepper
- nutmeg
Directions

Boil the carrots in salted water until tender

In a blender, puree carrots, cream of celery soup, applesauce and one can of water.

Pour mixture into a saucepan over low heat.

Add butter and brown sugar and stir until melted.

Add a dash of salt, fresh ground black pepper and nutmeg to taste.

Simmer and serve.
