This takes less than 15 minutes to prepare. It's not exactly low fat (small servings are probably best) but it's delicious.

Ingredients ( 2 - 3 )

  • 1 10.75 can of cream of celery soup
  • 8 oz. cut and peeled baby carrots
  • 2 tbsp. cinnamon flavored apple sauce
  • 1 tbsp. dark brown sugar
  • 1 tbsp. butter
  • salt
  • fresh ground black pepper
  • nutmeg

Directions

  1. Boil the carrots in salted water until tender
  2. In a blender, puree carrots, cream of celery soup, applesauce and one can of water.
  3. Pour mixture into a saucepan over low heat.
  4. Add butter and brown sugar and stir until melted.
  5. Add a dash of salt, fresh ground black pepper and nutmeg to taste.
  6. Simmer and serve.
