Ingredients ( 6-7 )

  • 150g flour
  • 1/2 tablespoon baking powder
  • 75g brown sugar
  • 10g sugar
  • 60g butter (room temperature)
  • 1 egg (L size) - room temperature
  • 60ml fresh milk
  • 1 peach
  • 50g icing sugar
  • 3 teaspoons water
  • 1 teaspoon vanilla essence

Directions

  1. Sift the flour and baking powder and keep aside
  2. Peel the peach and cut into small dice (size = 1.5cm) then keep aside
  3. Mix the white egg and egg yolk until blended and keep aside
  4. Beat the butter until creamy
  5. Add in the sugar and beat again until it becomes white
  6. Add in 1/3 of the combined egg and beat. Continue for the other 2/3 of the combined egg
  7. Add in 1/3 of the sifted flour and baking powder and immediately stir it, then add in 1/2 of the fresh milk. Continue this step for each 1/3 of the sifted flour and baking powder. (after add in the flour, stir immediately and add in 1/2 of the fresh milk)
  8. Finally add in the peach and mix until blended. Place the mixture into the muffin cup
  9. Bake at 180 degree for about 20 minutes
  10. Prepare the icing :- Combine the icing sugar, vanilla essence and the water and mix until blended
  11. When the muffin is baked, pour the icing to the top of the muffin
