Easy Cheesy Quiche

Ingredients ( 6-8 )
- 1- tube (8 oz.) refrigerated crescent rools
- 2 tsp. of your favorite deli mustard
- 6-8 bacon strips diced
- 3 cups/ 1 lbs. thinly sliced zucchini
- 1 medium onion diced
- 2 eggs well beaten
- 2 cups/ 8 oz. shredded cheese (any favorite cheese is ok, part skim mozzarella is best)
- 2 tbs. dried parsley flakes
- 1/2 tsp. pepper
- 1/4 tsp. garlic powder
- 1/4-1/2 tsp. dried oregano, dried basil, italian seasoning or any combination of these.
Directions

Pre-heat oven to 375. Grease or spray with oil 10 in pie pan.

Separate cresent dough into 8 triangles; place in greased 10 in pie pan with points towards the center. Press dough onto the bottom and up the sides of the pan to form a crust; seal sides together. Press evenly, if needed poke air bubbles with a fork. Spread mustard on crust evenly.

In a skillet fry bacon over medium heat until crisp. Remove from pan to paper towels; drain bacon grease leaving 2 tbs. in the pan.

In same pan with 2 tbs. bacon grease, saute zucchini and onion in drippings until tender.

In a large bowl, combine beaten eggs, sredded cheese, seasonings, with bacon and zucchini mixture.

Pour into crust.

Bake at 375 f for 25-30 minutes or until knife inserted near the center comes out clean.

Usually crust edges will brown too quickly and burn, if needed cover edges only, loosley with foil.
