Ingredients ( 6-8 )

  • 1 5-6 lb bone-in prime rib roast, trimmed
  • 6 large cloves garlic
  • 1/4 cup fresh rosemary leaves
  • 1/2 cup fresh basil leaves
  • 2 tsp kosher salt
  • 2 tsp coarse ground black pepper
  • 2 Tbsp Dijon mustard
  • 3 Tbsp extra- virgin olive oil

Directions

  1. Let roast warm at room temperature for 30 minutes. Preheat oven to 450
  2. Mince all extras into a paste and smear on roast.
  3. Cook bone side down at 450 for 15 minutes. Reduce heat to 325. Cook for 2 hours (internal temp 110) for medium-rare
  4. Remove bones and wrap in foil for 30 minutes.
  5. Make dressing. Bring to boil 3/4 cup heavy cream and 1 thin-sliced garlic clove. Simmer 10 minutes. Remove from heat, stir in 6 ounces blue cheese. Add coarse ground pepper to taste.
  6. Slice meat and serve with dressing.
