This was a recipe from my sister.. i am not sure where she got it from, but it is very delicious! This pasta salad tastes so much like a BLT sandwich.. and who doesn't like BLT's?

Ingredients ( Serves 6-8 )
- 8-oz. package of elbow macaroni, cooked
- 3-4 cups of tomatoes, peeled, seeded, and chopped
- 4-5 slices bacon, crisply cooked and crumbled
- 3 cups of Shredded Lettuce (Ice burg, or Romain)
- 1/2 cup of mayonnaise
- 1/3 cup of sour cream
- 1 Tablespoon of Dijon mustard
- 1 teaspoon of sugar
- 2 teaspoons of cider vinegar (regular is fine too)
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
Directions
-
Cook macaroni per directions on the box and rinse in cold water; drain and pour into a serving bowl.
-
In that serving bowl add in tomatoes, bacon, and shredded lettuce. Toss gently and set aside.
-
Mix remaining ingredients together in another mixing bowl. Stir well.
-
Pour over macaroni mixture. Gently toss until well coated. Serve immediately!
-
(I like to chill it for a few hours in the fridge.)
(It may need a little more sauce after refrigeration!)
