Cinnamon roll with the walnuts

Ingredients ( 9 )

  • For the dough:
  • 250g bread flour
  • 50g multi-purpose flour
  • 50g butter
  • 125ml fresh milk
  • 1 egg
  • 6g dry yeast
  • 1/2 teaspoon salt and 30g sugar
  • For the top of cinnamon roll:
  • 25g soft butter
  • Cinnamon sugar:
  • 25g walnuts
  • 50g sugar
  • 1 tablespoon cinnamon powder
  • 1 tablespoon multi-purpose flour
  • Cheese Frosting:
  • 25g cream cheese
  • 25g butter
  • 40g sugar
  • vanilla essence

Directions

  1. Sift flour. In another bowl, combine fresh milk and egg and make sure the quantity of the mixture is 200 ml. Add in sugar and salt into the mixture and mix well.
  2. Walnutscinnamonroll1 Put the flour into a bowl and make the hole on the middle of it as shown in the picture. Gradually put the mixture from step 1 into the hole and mix well until hard then put the dough on a knead plate.
  3. Walnutscinnamonroll2 Open up the dough as shown in the picture and put the yeast on it. Slowly knead the dough and make sure the yeast is not spread.
  4. Walnutscinnamonroll3 Knead until the dough do not stick at your hand
  5. Walnutscinnamonroll4 Divide butter into 3 parts. Gradually combine the butter with the dough and knead again.
  6. Walnutscinnamonroll5 Knead time is about 15-20 minutes. You can stop the knead process when you can see your finger through the thin layer of the dough as shown in the picture.
  7. Walnutscinnamonroll6 Rub a bowl with cooking oil or butter. Place the dough into the bowl and cover with plastic wrap. Let it rise double.
  8. Walnutscinnamonroll7 Tip : If you press the dough with your finger then there is the finger print on it as shown in the picture, that means your dough is rise already.
  9. Bake walnuts with the oven before use.
  10. Walnutscinnamonroll8 Combine all the ingredients for cinnamon sugar and keep aside.
  11. Walnutscinnamonroll9 Roll the dough into 20x40 cm. Rub with soft butter (Do not rub at the both edges (around 1cm).
  12. Walnutscinnamonroll10 Put the cinnamon sugar.
  13. Walnutscinnamonroll11 Roll the dough and press at the edge to close properly the roll as shown in the picture. Divide into 9 parts.
  14. Walnutscinnamonroll12 Put each part into a suitable container.
  15. Walnutscinnamonroll13 Let it rise double. Bake at 190 celcius for about 10 minutes. Then down the temperature to 180 celcius and bake again for about 5-8 minutes.
  16. Prepare cheese frosting. Combine all the ingredients for cheese frosting and beat until smooth.
  17. Place the cheese frosting on the hot cinnamon roll and ready to serve.
