Garlic Penne Chicken with Asparagus & Sun Dried Tomatoes
I came up with this recipe myself when I was trying to decide what to eat one night that would be tasty and healthy. It has about 517 calories, 21g fat, 57g carbs, and 30g protein in one serving.

Ingredients ( 1 )
- 3/4 Cup Whole Wheat Penne (Raw)
- 1 Tablespoon Extra Virgin Olive Oil
- 10 spears asparagus (medium) with the bottoms cut off, and then cut in half.
- 4 pieces of prepackaged sun dried tomato.
- 2 teasoppons shredded parmesan cheese
- 1/2 Cup Perdue Fresh Cuts Italian Chicken Breast (Pre- Cooked)
- 1 teaspoon minced garlic
- crushed red pepper and italian seasoning, as needed
Directions

1.) Bring water to a boil for the penne, and in a separate pan water to boil to steam the asparagus in.

Cut up the sun dried tomato pieces into smaller sections.

Cook the pasta until tender, and steam the asparagus.

One the pasta is done, strain. Also, strain the asparagus.

In a medium skillet pan, add the olive oil, asparagus, chicken, and sun-dried tomatoes.

Cook on medium heat until the asparagus is more tender and the chicken becomes slightly browned.

If the skillet gets too hot, add about a tablespoon or two of water so the food does not dry out, and then stir in the pasta, garlic, and spices.

Stir and reduce the heat to low. Add the parmesan cheese and serve.
