This sauce is good for most southwestern-style dishes, and makes for an excellent Huevos.

Ingredients ( 1 )

  • 2 tbs. vegetable oil
  • 1 cup finely chopped onion
  • 1 clove garlic, minced
  • 4 cups finely chopped fresh or canned tomatoes
  • 2 Anaheim or other mild chilies, cored, seeded and diced
  • 1 tsp. sugar
  • 2 tbs. minced fresh cilantro
  • salt and pepper to taste

Directions

  1. In a large skillet, heat the oil over medium heat. Add the onion and cook for 2 minutes, stirring. Add the garlic and cook for 2 more minutes, or until the onion is translucent.
  2. Add the tomatoes, chilies, sugar, salt and pepper. Simmer until slightly thickened, about 15 minutes, stirring occasionally. Stir in the chopped cilantro.
