This sauce is good for most southwestern-style dishes, and makes for an excellent Huevos.

Ingredients ( 1 )
- 2 tbs. vegetable oil
- 1 cup finely chopped onion
- 1 clove garlic, minced
- 4 cups finely chopped fresh or canned tomatoes
- 2 Anaheim or other mild chilies, cored, seeded and diced
- 1 tsp. sugar
- 2 tbs. minced fresh cilantro
- salt and pepper to taste
Directions

In a large skillet, heat the oil over medium heat. Add the onion and cook for 2 minutes, stirring. Add the garlic and cook for 2 more minutes, or until the onion is translucent.

Add the tomatoes, chilies, sugar, salt and pepper. Simmer until slightly thickened, about 15 minutes, stirring occasionally. Stir in the chopped cilantro.
