Meronpan

One of the familiar bread you can see in japan. Bread cover by some cookie. The shape is like honey dew, thats why it called meron pan (honey dew bread)

Ingredients ( 10 )

  • For bread
  • 125ml water
  • 30g egg
  • 250g bread flour
  • 25g sugar
  • 12g skim milk powder
  • 4g salt
  • 25g butter
  • 4g dry yeast
  • For cookie
  • 150g flour
  • 45g sugar
  • 4g baking powder
  • 30g butter
  • 50ml egg
  • 20g chocolate chips

Directions

  1. Add all ingredients for bread into bread machine, set to dough cycle, and start the bread machine
  2. Meronpan1 In the mean time, prepare the cookie. Beat butter until creamy. Add in sugar and beat again until it become white.
  3. Meronpan2 Add egg and mix well until blended.
  4. Meronpan3 Sift flour and baking powder into the bowl from step 2 and mix well until it become a dough. Divide the dough into 2 parts.
  5. Meronpan4 Combine a part of dough with chocolate chips.
  6. Meronpan5 Let the other part without chocolate chips.
  7. Meronpan6 Wrap both of the dough with plastic wrap and freeze in a refrigerator for at least 20 minutes.
  8. Meronpan7 When the breadmaker has finished the dough cycle, take the dough out and punch down air
  9. Meronpan8 Divide the dough into 10 portions and circle each portion.
  10. Meronpan9 Bench time for 10-15 minutes. Place wet cloth on the dough.
  11. Meronpan10 Take out the dough for cookie from the refrigerator and divide into 10 portions (5 with chocolate chips and 5 without chocolate chips)
  12. Meronpan11 Roll each dough of cookie as shown in the picture
  13. Meronpan12 Cover the top of each bread with the cookie as shown in the picture
  14. Meronpan13 Put the cookie on the bread into a container contains sugar as shown in the picture
  15. Meronpan14 Slice the cookie part as shown in the picture.
  16. Meronpan15 Let it rise double, about 35-40 minutes at 30 degree
  17. Bake at 180 degree for about 10-12 minutes.
