Ingredients ( Serves about 8-10 )

  • 1 ripe banana
  • 1 cup vanilla yogurt. (Or use plain yogurt and add about 1/2 cup brown sugar and 1 tsp. vanilla extract.)
  • 4 Tbsp pineapple juice
  • 3 mangos, seeded, peeled, and chopped
  • 1-2 cups sliced fresh strawberries
  • 1 cup cantaloupe or honydew melon, seeded and chopped.
  • 1/2 cup coconut, toasted. ( To toast, spread coconut in a shallow baking pan; bake in a 350 oven 5-10minuets or until light golden brown, stirring once or twice.)

Directions

  1. For dressing, in blender or food processor, combine yogurt, banana, and pineapple juice. Blend until smooth. Transfer to covered container and refrigerate while preparing fruit.
  2. In bowl or baking dish, mix together chopped mango, sliced strawberries, and melon. Spoon yogurt mixture over fruit and top with toasted coconut.
