I have tried over and over to come up with the perfect recipe for hummus and I think I've finally done it. It's so good with sliced fresh baguette and oil cured olives.

Ingredients ( Makes about 2 cups? )

  • 1 15 oz can garbonzo beans (or chick peas), drained with water reserved
  • 1 tbsp olive oil
  • 2 tbsp raw tahini
  • 2 tsp lemon juice
  • 1 large clove of garlic, or 2 small
  • cracked black pepper
  • 1 tsp salt

Directions

  1. In a food processor, blend garbonzo beans, olive oil, tahini, lemon juice, garlic and salt until mostly smooth, adding reserved water from garbonzo beans to thin hummus to desired texture.
  2. Serve a dallop with a dip in the middle, filled with high quality olive oil and sprinkle cracked black pepper on top.
