An easy meal using few ingredients that can be put on before you leave for work in the morning and be ready to eat when you get home!

Ingredients ( 2-4 )

  • 2-boneless, skinless chicken (or turkey) breasts, about 1lb total
  • 2 cans cream of mushroom soup
  • 4-5 medium potatoes, peeled and cut into 1 1/2 inch cubes
  • 1 teaspoon salt
  • pepper to your taste

Directions

  1. Pour both cans of cream of mushroom soup into the crock pot along with 2 cans of water, salt and pepper.
  2. Slice each breast in half, width wise.
  3. Add both breasts to the soup mixture and turn on high.
  4. You can add the potatoes along with the breasts OR in about 2 hours, add the potatoes
  5. Stir occassionally. Turn on low after breasts have cooked for about 2 hours. Leave on low until ready to serve.
  6. * Also good with carrots sliced and added with potatoes. If you don't have the time, all the ingredients can be added together and cooked on low for as long as you need (no more than 9 hours).
