Ingredients ( 18cm )

  • 80g graham cracker
  • 40g butter
  • 200g cream cheese
  • 30g sugar
  • Grated lemon peel from a lemon
  • 4 tablespoons honey
  • 60g plain yogurt
  • 70g fresh milk
  • 12g gelatine (dissolve with 3 tablespoons warm water)
  • 125g fresh cream
  • Lemon juice from a lemon
  • 6 tablespoons blueberry jam
  • 70g blueberry fruit

Directions

  1. Blueberrycheesecake1 Insert cracker into a plastic beg and beat until broken.
  2. Blueberrycheesecake2 Add the butter into the plastic bag and press to combine it with the broken cracker
  3. Blueberrycheesecake3 Add the combined butter and cracker into a greased pan (size 18cm) and press firmly. Keep in refrigerator for a while
  4. Blueberrycheesecake4 In a bowl, beat the fresh cream until there are a small horn on it as in the picture
  5. In another bowl, dissolve the cream cheese by put it the bowl with cream cheese into the hot water. Then add in sugar, honey and grated lemon peel. Mix well until blended
  6. Add in the yogurt and fresh milk into the combination of sugar,honey,lemon peel and cream cheese. Mix well until blended. Add in the dissolved gelatine and mix well
  7. Blueberrycheesecake6 Add the combination from step 6 into a bowl with fresh cream. Add lemon juice and mix with a spatula as in the picture
  8. Take 1/4 of the mixture and combine it with 6 tablespoons blueberry jem and mix well
  9. Blueberrycheesecake7 Add the combination of the mixture with jem with the remainings mixture and stir slowly to make marble shape
  10. Blueberrycheesecake8 Pour 1/2 of the above mixture into a greased pan with the crust. Place the blueberry fruit on it and pour the another half of the mixture.
  11. Freeze in a refrigerator

I exchanged the blueberries with strawberries - worked very nice. You can see the blueberry one in the background.

Great recipe! Very quickly and easily prepared. I think you could replace blueberries with any other berries. I will try with strawberries next time. Thanks for sharing!

Great recipe and really make me looking forward to try it out. Yani, I have few question as below:- 1) It is fine to substitute the plain yogurt with strawberry yogurt since I like strawberry yogurt very much? 2) How long the cheesecake can be kept in refrigerator?2 days or 3 days? Thanks a lot for sharing and hope to hear from you soon.

@cplin, thanks, The answer for your question are:-. 1) I think it is fine to substitute plain yogurt with strawberry yogurt, but don`t forget to reduce the amount of sugar stated in this recipe, becuase strawberry yogurt itself is sweet already. 2) From my experience, this cheesecake can be kept almost for one week. Looking forward to see your cooking report here.

Thanks a lot for the answer and advise. Emm... I try to find fresh cream around the supermarket. I am not sure if fresh cream is same as the light whipping cream in spraying bottle.If not, I wonder can I substitute it with whipping cream? Thanks a lot. I will try it out soon as a birhtday cake.
